Daniel Fasting
The "Daniel Fast" is a fast according to Daniel 10. (Please read for a better understanding.) During this fast we intake water, fruits, vegetables, and nuts. We eliminate breads, sweets, meats, and other drinks.
(I personally stay away from sugar and salt while doing the "Daniel Fast". That is why you won't see it in these recipes.)

Release Recipes - Since I cook so much and eat so much, wanted to share some ideas and recipes here for this fast to perhaps inspire you to try it or stick with it. Not only are these recipes healthy, but they are quite yummy as well. So whether or not you are fasting here are some good eating ideas. My style is akin to the way a Grandma would cook in that I myself am not very exact in measurements and procedures. Many of these recipes will relect that. Check back often as I am trying new recipes to add. Also PLEASE PLEASE feel free to share with me any ideas or recipes of your own. As a matter of fact, even if they aren't vegan or Daniel Fast recipes I would like for you to share them with me. THANK YOU.)

BREAKFASTS
Berry Orange Dream
INGREDIENTS:
mandarin oranges in juice
sliced strawberries
DRESSING - coconut milk
half of 1vanilla bean seeds
PREP: To make Dreamy Dressing - Pour coconut milk into bottle. Split fresh vanilla bean. Scrape seeds from inside. Add seeds to coconut milk. Secure bottle top and shake.
Slice fresh strawberries into bowl. Add oranges. Pour as much dressing on as you want. Toss together and enjoy.

Superfruit Smoothie

1 cup blueberries (frozen)
1 cup raspberries (frozen)
2 kiwifruits (peeled)
2 oranges (peeled)
coconut milk
1 tsp cinnamon
0.5 tsp ginger
PREP:
Put the fruit in a blender and pour coconut milk until it covers the fruit. Add the spices and blend. Pour into glasses and garnish with cinnamon.

Chillied Lentil Stew
INGREDIENTS:
dried lentils
small chunks of eggplant
small chunks of white button mushrooms
1small hunts tomato sauce
water
chili powder
garlic
PREP: Toss it all in a pot. Bring to a boil. Turn down the heat, cover and simmer until done.

DINNERS
Mushroom Risotto
INGREDIENTS:
PREP:
- 2 tablespoons olive oil
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1-1/4 cup finely chopped fresh wild mushrooms of your choice
- 1 cup Arborio rice, rinsed and drained
- 2 cups warm vegetable broth
- 3 tablespoons vegan butter
- 2 tablespoons minced fresh herbs of your choice
- Salt and freshly ground black pepper
PREP:
- Heat oil in a large saucepan over medium heat. Add onion, garlic, and mushrooms. Cook, stirring often, until mushrooms release their liquid.
- Add rice and cook, stirring, until rice smells lightly toasted.
- Stir in 1/4 cup broth, cover pan, and let cook for a couple of minutes.
- Gradually add broth, 1/4 to 1/3 cup at a time, stirring and covering each time, as rice absorbs the broth.
- Risotto is done when rice is tender and the mixture is thick.
- Stir in butter and fresh herbs, stirring until butter is melted and incorporated into the risotto.
- Season with salt and pepper. Serve immediately.
Simple Tastey Peas
cook peas with seasoning blend & extra virgin olive oil.

Chillied Vegan Shepherd's Pie
INGREDIENTS:
leftover chillied lentil stew
potatoes
PREP:
Peel & chop potatoes.
Boil potatoes.
Drain and cream potatoes with hand mixer.
Place on top of stew then enjoy.

the Greasy Vegan
INGREDIENTS:
1 larg potato
about 1 cup chopped onion
1/2 chopped avocado
1 cup chopped portobella mushroom
olive oil
PREP:
Boil whole potato (peel if desired) about 10 to 15 minutes. (This step will make potatoes crispy after frying.) Take out of water and let cool at least enough to work with. Pour olive oil into skillet to about one quarter inch deep in the pan. Sautee onions in olive oil. Take out and place into bowl. Slice potatoes and fry in the same olive oil unil they are golder brown and crispy but tender inside. Place on top of onions. Place chopped avocado on top of potatoes. Then sautee chopped portobella mushrooms. Place on top of avocado.
*Sometimes I boil a batch of potatoes just to have on hand for crispy frying at any time. Potatoes go with everythng. They should keep for up to at least a week.

INGREDIENTS
1can Gold Star coconut milk
seeds from 1/2 vanilla bean
about 1 cup Sunrise Growers frozen mango chunks
1 box (4.25oz) golden raisins
about 1 cup ice

Apple and Nut Butter Sandwiches
Smear peanut butter on an apple — it's the perfect combination of protein and fiber.
Make the snack a little classier by cutting the apples into rings and using them as "bread"
in a fruit and peanut butter sandwich.
